Sort through the beans, removing any dry, shriveled, or moldy ones.

Rinse the beans well in plenty of cold running water.

Put the beans in a large container (they will swell to nearly three times their dry volume as they soak).

Add enough cold water to cover the beans by 2 or 3 inches.

Cover loosely with a cloth or plastic wrap or with a lid and airlock.

Ferment at room temperature until you can see some bubbles forming, usually 24 to 36 hours.

Change the soaking water two or three times for the best flavor.
